RISO VENERE PRIMAVERA - SPRING VENUS RICE


Un trionfo di primavera e di colore! Un piatto di facile preparazione ma di sicuro effetto e gusto!

A triumph of spring and color! A dish easy to prepare but highly effective and taste!


Occorrente per 4 persone:

  • 280 gr di riso Venere nero.
  • 300gr di piselli (anche surgelati)
  • un mazzo di asparagi
  • 1/2 porro
  • margarina vegetale
  • olio EVO
  • sale & pepe
Per la decorazione:
  • 4fiori di zucca
  • 100gr farina 00
  • 200gr acqua fredda
  • olio d'arachide

Needed for 4:
  • 280 grams of Venus black rice.
  • 300g of peas (also frozen)
  • a bunch of asparagus
  • 1/2 leek
  • vegetable margarine
  • EVO oil
  • salt and pepper
For decoration:
  • 4 zucchini flowers
  • 100gr 00 flour
  • 200gr cold water
  • peanut oil
Preparazione:

Prima di tutto prepariamo la crema di piselli: fate bollire 10 minuti i piselli, scolateli e passateli in padella con un filo d'olio evo e qualche fettina sottile di porro, fate insaporire per bene, salate e pepate. Frullate i piselli aggiungendo all'occorrenza acqua e un filo d'olio, dovrete ottenere una crema liscia e cremosa (mettete da parte).

Ora prepariamo il condimento per il riso: fate sbollentare 3 minuti gli asparagi in acqua salata, scolateli e raffreddateli con acqua fredda. Tagliateli in piccole rondelle e tenere intere le punte.
Affettate la metà porro e passatela in padella con la margarina vegetale e gli asparagi. Correggete eventualmente di sale e pepe.

Ora che è tutto pronto non ci resta che mettere a bollire l'acqua salata per il riso (per la cottura seguite le istruzioni sulla scatola perché i tempi possono variare molto da marca a marca).
Una volta pronto saltatelo in padella con gli asparagi e i porri.

Nel frattempo mettere a scaldare l'olio (dovrà raggiungere i 190 gradi), preparate una pastella con 100gr di farina e 200gr di acqua molto fredda, dovrete ottenere un composto liquido ma non troppo. 
Pulite i fiori di zucca ed immergeteli delicatamente nella pastella lasciando scivolare via l'eccesso.
Friggeteli e passateli nella carta assorbente.

Componete il piatto: mettete un coppapasta al centro del piatto e metteteci il riso, attorno fate scivolare la crema di piselli, togliete il coppapasta e appoggiate il fiore di zucca fritto.

Preparation:

Puree the peas and if necessary add water and a little olive oil, you will have to obtain a smooth cream and creamy (set aside).

Now we prepare the sauce for the rice: boil the asparagus for 3 minutes in salted water, drain and cool them with cold water. Cut them into small slices and keep the tips whole.
Slice the leek half and pass it in a pan with margarine and asparagus. Correct if necessary with salt and pepper.

Now that everything is ready we just have to boil the rice in salt water (for cooking, follow the instructions on the box because the times can vary widely from brand to brand).
Once ready jump it in a pan with asparagus and leeks.

Meanwhile put to heat the oil (must reach 190 degrees), prepare a batter with 100g of flour and 200g of very cold water, you will have to obtain a liquid mixture, but not too much.
Clean the zucchini flowers and dip them in the batter gently letting slip away the excess.
Fry and clean on absorbent paper.

Assemble the dish: put a pastry rings in the middle of the plate and put the rice in it, slide around the cream of peas, remove the pastry rings and place the flower of fried pumpkin.
