Autumn is coming and what better than have breakfast with some healthy biscuits and seasonal flavors like chestnuts and raisins ?!
These are cookies give their best dunked in a cup of plant milk ;-)
Needed for 20/25 biscuits:
- 200 grams of rice flour or flour 00
- 120 grams of chestnut flour
- 60 grams of raisins previously soaked and drained + 3 grapes each biscuit for decoration
- 80 g of honey
- 65 ml vegetable oil
- 15 grams baking powder
- warm water
- salt
Method:
Preheat oven to 190 °.
Mix in a bowl the flour and baking powder (they have to be sifted to avoid annoying lumps). Add a pinch of salt and raisins soaked. Apart mix honey with oil and stir in the flour mixture.
Gradually add warm water (about 100-120 ml) until dough is not sticky but compact.
Knead the dough on a work surface and roll into balls, flatten them and place them on the baking sheet covered with greaseproof paper.
Before baking I decorated cookies with raisins and dark chocolate flakes.
Bake for 15-18 minutes. Taste them cold.
