PANE MEDITERRANEO - MEDITERRANEAN BREAD

Ever since my mom gave me the machine to make bread, Mediterranean bread has become a drug!  :)

  • 440 gr farina 0
  • 1 bustina di lievito di birra
  • 1 cucchiaio di origano
  • 50gr olive denocciolate (a vostra scelta tra verdi e nere)
  • 25gr di capperi
  • 100gr di pomodori secchi sott'olio, ben scolati

Ingredients for a loaf of 750g:
  • 240ml of water at about 37 °
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons oil (I use the dried tomatoes)
  • 440 g flour 0
  • 1 sachet of yeast
  • 1 tablespoon of oregano
  • 50g pitted olives (your choice between green and black)
  • 25gr of capers
  • 100g of dried tomatoes, well drained
Procedimento:

Method:
with my bread machine must first enter all the liquid ingredients, then flour, finally the yeast. I have to set the maximum browning and start mixing, then insert additional ingredients coarsely chopped (olives, capers and sun-dried tomatoes). The program lasts about 3 hours and 40 minutes and the result is a beautiful loaf of 750gr.

If you put it in the film, it'll stays fresh a few days otherwise you can safely cut into slices and let them warm in the oven to have an amazing Bruschetta, maybe it is even better!
For me the perfect match, after many experiments, is with the classic hummus, sliced MOPUR and sautéed cabbage (top picture).
The cabbage will be cleaned and then blanched leaf by leaf for about a couple of minutes and then cut into strips and put into a pan with extra virgin olive oil and your favorite seasonings!
I assure you that it is a treat! If you have guests it is nice to serve sliced bread and then all kinds of possible toppings so that everyone prepare the "perfect sandwich!".

TIMBALLO INDIANO! Indian Timbale!

Hello, I know that these photos are not very inviting but trust me, this dish is a delight full of flavors and aromas that come from far away ...

Occorrente per 4 persone:
  • 280gr di riso basmati integrale
  • 1 verza
  • 2 carote
  • 1 cipolla
  • Tandori Masala (spezia che trovate tranquillamente all'Esselunga)
  • olio EVO
  • sale & pepe
  • brodo di verdure

Needed for 4:

  • 280 g basmati whole rice
  • 1 cabbage
  • 2 carrots
  • 1 onion
  • Tandori Masala
  • extra virgin olive oil
  • salt and pepper
  • vegetable broth
Procedimento:

Method:

Cut the carrots into rounds rather fine and the cabbage into thin strips.
Finely chop the onion and fry with a little olive oil. Once cooked, add the vegetables and cook. Add a ladle of broth and a few teaspoons of Tandori Masala, salt and pepper, stir, cover and simmer about 30 minutes, add broth if necessary.

Meanwhile, prepare the rice.
Preheat the oven to 180 degrees, in a pan that can go both on the hob and in the oven toasted rice with a little extra virgin olive oil, add 6 dl of broth, do return to boil and then bake for about 17 minutes. Keep checking the level of the broth, once ready, the rice should have absorbed all but should not be dry.
Remove from oven and add a little oil to rice to separate the grains.

Place your vegetables in a baking dish and top of the rice, the ideal would be to have the ramekins from the oven to serve each diner's, but I had not and I used a unique pan (still has to be fine).
Bake at 180 degrees for 15 minutes, until the rice has formed a golden crust,

Bon Appètit

VEGAN-TIRAMISU'
