This year it was a different Christmas for everyone, we could not have the usual lunch with the whole family, so, since we had to stay at home, I experimented in the kitchen and I wanted to put all the Christmas flavors  that I prefer in a single dish. This is how my Christmas crepes with chestnut béchamel, pumpkin, mushroom and truffle filling were born! They are amazing!!!

Ingredienti per 4 persons

Per le crepes:

  • 250gr di farina integrale
  • 500ml di latte di soia non zuccherato
  • 1 cucchiaio d'olio
  • sale q.b.
Per la farcia:
  • 4 fette di zucca
  • 300gr di funghi misti freschi
  • salsa al tartufo
  • formaggio vegan grattugiato (io ho usato il Gondino stagionato, top)
  • aglio e rosmarino
  • olio, sale e pepe
  • 50 gr margarina vegetale
  • 50gr di farina integrale
  • sale e pepe
  • 500ml besciamella vegetale pronta
Ingredients for 4 people
For the crepes:

  • 250g of wholemeal flour
  • 500ml of unsweetened soy milk
  • 1 tablespoon of oil
  • Salt to taste.
For the filling:
  • 4 slices of pumpkin
  • 300g of fresh mixed mushrooms
  • truffle sauce
  • grated vegan cheese (I used aged Gondino, top)
  • garlic and rosemary
  • oil, salt and pepper
For the bechamel:
note: I used two different béchamel, one for the filling and one to cover the crepes.
  • 500 ml of chestnut milk
  • 50 gr vegetable margarine
  • 50g of wholemeal flour
  • salt and pepper
  • 500ml vegetable béchamel ready
Procedimento

Method
First I cooked the pumpkin in the oven without any aroma, I simply cleaned it and put it in the oven at 180 degrees until soft but not too soft because then it must be sautéed in a pan.
Meanwhile, prepare the crepes, in a bowl mix the wholemeal flour with the soy milk and a tablespoon of oil and a pinch of salt, making sure that no lumps are formed. We heat a pan of 15 / 20cm and grease it with a drop of oil, put a ladle of batter so that it covers the entire surface, cook on both sides and set aside, we do so for all the batter. Crepes can be prepared in advance.
Cook the mushrooms: in a pan put a drop of oil, two cloves of garlic and the mushrooms cut into pieces, cook for about 20 minutes and season with salt and pepper.
Now take the pumpkin, cut it into small pieces and put it in a pan over high heat with garlic, oil and rosemary, season with salt and pepper.
Now let's prepare the béchamel that we will insert into the filling of the crepes.
In a pan melt the margarine and add the flour, stirring vigorously to avoid lumps, now add a drop of hot chestnut milk to dilute the flour and then add the rest of the milk, cook until it reaches the desired consistency.
At this point we assemble!
We dirty a baking dish with a little bit of bechamel, make the crepes with a spoonful of pumpkin, one of mushrooms, and two spoons of chestnuts bechamel mixed with half a teaspoon of truffle sauce and a sprinkling of grated vegan cheese.
We arrange the crepes in the pan so that each crepes rests on the previous one.
At this point, if you have some chestnut béchamel left over, mix it with the ready-made one and cover all the crepes and sprinkle everything with a generous grating of vegan cheese.
Bake at 180 degrees for about 15 minutes and then grill for 5 minutes to brown the surface.
Let it cool for a few minutes before serving.

ZUPPA ZUCCONA - MORE THAN A PUMPKIN SOUP

Freezing outside, the holidays are over and you are back to the usual routine ... we need a delicious dish that gets you feel better! For me, the soups are always a yummy comfort food.

Occorrente:

  • 4 patate medie
  • 1 dado bio vegan
  • 1 cipolla
  • olio EVO
  • un cucchiaio di concentrato di pomodoro
  • 1 latta di ceci
  • 1 latta di fagioli
  • 1 latta di lenticchie
  • crema di zucca
  • castagne bollite (optional)
  • sale e pepe

Needed:

  • 4 medium potatoes
  • 1 vegan stock cube
  • 1 onion
  • EVO oil
  • a tablespoon of tomato paste
  • 1 can of chickpeas
  • 1 can of beans
  • 1 can of lentils
  • pumpkin cream
  • boiled chestnuts (optional)
  • salt and pepper
Procedimento:

Method:
Peel and cut the potatoes into cubes.
Chop the onion and brown it in the oil with a spoon of tomato paste and crumbled stock cube.
When the onion is cooked, add the potatoes and let them flavor. Add water to cover the potatoes and cook over low heat for about 30 minutes, stirring occasionally.

Now add the canned chickpeas and simmer 10 minutes, then add the beans and lentils and cook another 10 minutes.
Now add the pumpkin cream (it is made with leftover pumpkin cooked in the oven and then pureed with a little of olive oil) and boiled chestnuts if you like.
Simmer until it reaches the desired consistency.
Season with salt and pepper and serve with a slice of toasted whole wheat bread.

ZUPPA D'ORZO CON PATATE, PORCINI E CASTAGNE. BARLEY SOUP WITH POTATOES, MUSHROOMS AND CHESTNUT.

This soup is THE autumn soup par excellence! It contains all the flavors typical of the period as chestnuts and mushrooms and warms the belly in the cool autumn evenings.
It must be tried at least once!
Since it is a little difficult to do, I suggest you make it a good dose and then frozon.

Occorrente per 4/5 persone:
  • 3 patate medie
  • 1 porro
  • 1 costa di sedano
  • timo, rosmarino
  • 1,5 lt brodo vegetale
  • olio EVO
  • sale & pepe
  • alloro (facoltativo)
Needed for 4/5 people:
  • 3 medium potatoes
  • 280 grams of fresh chestnuts
  • 300 grams of barley (I used to be ready in 10 minutes so we avoid having to soak the night before)
  • 30 grams of dried porcini mushrooms
  • 1 leek
  • 1 celery
  • thyme, rosemary
  • 1.5 liters broth
  • extra virgin olive oil
  • salt and pepper
  • bay leaves (optional)
Procedimento:

Mettiamo in ammollo i porcini in circa mezzo litro di acqua calda.

Method:
We soak the mushrooms in a pint of hot water.

We begin to cook chestnuts.
We wash and apply a fairly deep incision in the skin, so you sheep skin more easily. Put them to boil in salted water with a few bay leaves (optional), will cook about 40 minutes. They should be soft but not too much because it will continue cooking in our soup.

While cooked chestnuts we prepare the broth.
In the pot put to boil 1.5 liters of water, add vegetable stock cube, a pinch of salt and celery washed and cut into pieces.
When the broth and chestnuts are almost ready to begin preparing the soup.
Washed, peeled and diced potatoes.

In a large pan we fry in 3/4 tablespoons extra virgin olive oil all over the leek thinly sliced, including green part, with rosemary and thyme chopped well so you do not find the needles in the mouth.

Lasciamo cuocere circa 15 minuti.
After a few minutes, add the celery boiled in broth, 1 liter of the same broth and potatoes. Let cook about 15 minutes.

Meanwhile peel the chestnuts and drain the mushrooms but keep the soaking water.
After 15 minutes, add the chestnuts and mushrooms to the soup, we stretch with 300 ml of water soaking the mushrooms filtered, add salt and pepper and cook for 20 minutes.

We now add the barley and the remaining water of the mushrooms. Let cook until the barley is cooked (about 15-20 minutes). If you were too dry, add hot water.

Let cool a few minutes and serve with a drizzle of olive oil.

Bon Appètit
