CANNELLONI ZUCCA E FUNGHI - PUMPKIN AND MUSHROOM CANNELLONI

Since the ricotta and spinach cannelloni have been very successful, I also tried to make a version with pumpkin and mushrooms!

Ingredienti per 6 persone:

  • 1 confezione di cannelloni senza uova
  • 500ml di besciamella vegan
  • 500gr champignon freschi
  • olio EVO
  • aglio
  • rosmarino
  • sale & pepe
Ingredients for 6 people:
  • 1 pack of egg-free cannelloni
  • 500ml of vegan bechamel sauce
  • 500g fresh champignons
  • 1/2 pumpkin (I choose the very sugary quality)
  • 1 vegan mushroom sauce (I used the one from Biffi)
  • vegan grated cheese (I choose the Gondino that I love)
  • extra virgin olive oil
  • garlic
  • rosemary
  • salt and pepper
Procedimento

Method
First cook the pumpkin, I clean it, cut it into slices and put it in the oven at 180 degrees without adding anything until it is tender but not too much because then it will be sautéed in the pan.
In the meantime, clean the mushrooms and cut them into small pieces, heat some oil in a pan and add a clove of garlic and then the mushrooms, cook over medium heat for about 30 minutes, stirring often and then season with salt and pepper. We set aside to cool.
Now cut the pumpkin into cubes and toss it in a pan with oil, garlic and a sprig of rosemary, it must be browned well, season with salt and pepper. Let's leave aside.
Now mix the béchamel with the mushroom sauce, mix the pumpkin with the mushrooms in a bowl and add some of the flavored béchamel. We fill the cannelloni and cover them with the remaining béchamel, add a generous grating of vegan cheese and bake for 30 minutes at 180 degrees plus 5 minutes of grill if you want the crunchy crust.

Bon Appetit

CANNELLONI agli SPINACI - SPINACH CANNELLONI

Here is a traditional recipe revisited in a veg and also super fast key, I admit that I did not want to make fresh pasta or to prepare béchamel sauce so I bought them.

Ingredienti per 6 persone:

  • 1 confezione di cannelloni secchi senza uova
  • 1kg di spinaci surgelati
  • 1lt di besciamella 100% vegetale
  • formaggio vegan (io uso il Gondino)
  • 1 cucchiaio di margarina
  • latte vegetale senza zucchero (opzionale)
  • passata di pomodoro
  • pangrattato
  • sale & pepe
Ingredients for 6 people:
  • 1 pack of dried cannelloni without eggs
  • 1kg frozen spinach
  • 1lt 100% vegetable béchamel
  • vegan cheese (I use Gondino)
  • 1 tablespoon margarine
  • sugar-free vegetable milk (optional)
  • tomato puree
  • Breadcrumbs
  • salt & pepper
Procedimento:

Procedure:
First we prepare the filling because it has to be cold in order to stuff the cannelloni.
So boil the spinach in salt water until it's thawed, let them cool down a little bit and then squeeze them well to take the excess water out, chop them with the knife. In a large pan brown the margarine and sauté the spinach adding if you want a drop of milk and a generous sprinkle of vegan grated cheese, add salt and pepper.
Let it cool and then mix them with about 400/500ml of béchamel.
In the baking tray that will go in the oven spread a layer of tomato puree and flavor it with salt and pepper, at this point fill the cannelloni! I used a teaspoon, choose the method that is most convenient to you.
Spread the cannelloni in the pan without overlapping them.
Mix the remaining béchamel sauce with two tablespoons of tomato puree and cover all the cannelloni and dust with a generous handful of breadcrumbs.
Bake for 30 minutes at 180 degrees then another 5/10 minutes of grill.
Wait a couple of minutes before serving.

This year it was a different Christmas for everyone, we could not have the usual lunch with the whole family, so, since we had to stay at home, I experimented in the kitchen and I wanted to put all the Christmas flavors  that I prefer in a single dish. This is how my Christmas crepes with chestnut béchamel, pumpkin, mushroom and truffle filling were born! They are amazing!!!

Ingredienti per 4 persons

Per le crepes:

  • 250gr di farina integrale
  • 500ml di latte di soia non zuccherato
  • 1 cucchiaio d'olio
  • sale q.b.
Per la farcia:
  • 4 fette di zucca
  • 300gr di funghi misti freschi
  • salsa al tartufo
  • formaggio vegan grattugiato (io ho usato il Gondino stagionato, top)
  • aglio e rosmarino
  • olio, sale e pepe
  • 50 gr margarina vegetale
  • 50gr di farina integrale
  • sale e pepe
  • 500ml besciamella vegetale pronta
Ingredients for 4 people
For the crepes:

  • 250g of wholemeal flour
  • 500ml of unsweetened soy milk
  • 1 tablespoon of oil
  • Salt to taste.
For the filling:
  • 4 slices of pumpkin
  • 300g of fresh mixed mushrooms
  • truffle sauce
  • grated vegan cheese (I used aged Gondino, top)
  • garlic and rosemary
  • oil, salt and pepper
For the bechamel:
note: I used two different béchamel, one for the filling and one to cover the crepes.
  • 500 ml of chestnut milk
  • 50 gr vegetable margarine
  • 50g of wholemeal flour
  • salt and pepper
  • 500ml vegetable béchamel ready
Procedimento

Method
First I cooked the pumpkin in the oven without any aroma, I simply cleaned it and put it in the oven at 180 degrees until soft but not too soft because then it must be sautéed in a pan.
Meanwhile, prepare the crepes, in a bowl mix the wholemeal flour with the soy milk and a tablespoon of oil and a pinch of salt, making sure that no lumps are formed. We heat a pan of 15 / 20cm and grease it with a drop of oil, put a ladle of batter so that it covers the entire surface, cook on both sides and set aside, we do so for all the batter. Crepes can be prepared in advance.
Cook the mushrooms: in a pan put a drop of oil, two cloves of garlic and the mushrooms cut into pieces, cook for about 20 minutes and season with salt and pepper.
Now take the pumpkin, cut it into small pieces and put it in a pan over high heat with garlic, oil and rosemary, season with salt and pepper.
Now let's prepare the béchamel that we will insert into the filling of the crepes.
In a pan melt the margarine and add the flour, stirring vigorously to avoid lumps, now add a drop of hot chestnut milk to dilute the flour and then add the rest of the milk, cook until it reaches the desired consistency.
At this point we assemble!
We dirty a baking dish with a little bit of bechamel, make the crepes with a spoonful of pumpkin, one of mushrooms, and two spoons of chestnuts bechamel mixed with half a teaspoon of truffle sauce and a sprinkling of grated vegan cheese.
We arrange the crepes in the pan so that each crepes rests on the previous one.
At this point, if you have some chestnut béchamel left over, mix it with the ready-made one and cover all the crepes and sprinkle everything with a generous grating of vegan cheese.
Bake at 180 degrees for about 15 minutes and then grill for 5 minutes to brown the surface.
Let it cool for a few minutes before serving.

This is an excellent idea for Sunday lunch with the family, it's yummy and everyone like it!

Occorrente per 4 persone:

Needed for 4 people:
  • 400g of pasta (we chose the macaroni)
  • seitan sauce
  • 1 lt of vegetable bechamel
  • 1 can of lentils
  • 200g frozen peas

Procedimento:

Method:

First, we prepare the seitan sauce, the recipe here.
Boil the pasta in salted water, remember to drain a few minutes before is cooked so that it is al dente and it's not going to smash into the oven. Pass it immediately under cold water to stop the cooking. Let's boil also frozen peas for about 10 min and chill also under cold water.
Now is the time to turn on the oven to 180 °, in the meantime, we prepare the vegetable bechamel, the recipe here (as an alternative to soy milk can also use almond milk NOT sweetened) or you can buy one ready but I assure you the homemade is much better.

Drain and rinse the lentils. Take a pan and pour a first layer of bechamel, keep aside a part of it. Mix the remaining bechamel with the sauce, lentils and peas and dress the pasta. Pour it into the pan.
We cover it with the bechamel we had kept aside and bake for about 15-20 minutes, I like to form a crispy crust so the last five minutes turn on the grill to 220 °.

Remove from the oven and let cool a few minutes because it will be hot.

Bon Appetit.

VEGAN-TIRAMISU'
